Recently I have been shooting a lot with the 2-s. I really enjoy this camera. I just wish it had a flipscreen and better long exposure possibilities. But this wish is not worth 7k to me. Instead of a new SL3, one could buy a good secondhand 2(s) plus apo/lux objective.

The flipscreen I solved via the ipad and tripod mount. Long exposure can be solved with LENR. Despite previous ideas, I will pass on a new SL3. To me, a second body plus 50mm lux makes more sense.

Question is, which SL to buy: the 2 or the 2-s. Had this struggle once before already.

Tough Call.  In good light (under ISO 1600) the SL2 is a great camera.  Also, for some reason, high contrast black and white images have a very different look with the SL2 and it was one of the reasons I loved the camera.  But, as a low light shooter, the SL2-S was a better choice (for me).  I do love the SL2-S, though, and I may end up keeping it alongside the SL3.  I'll need to do a lot of side by side shooting to figure it out.

 With your scenario as written, I would go the SL2 as second camera since you already own the SL2-S. 47MPs being the distinguishing factor IMO.

...and it still remains to be seen whether the PDAF matrix over the new sensor will influence the perceived sharpness and resolution as compared to the SL2 which doesn't have it.  I don't know if it will be similar to the effects of the having the Bayer filter vs not, like on the monochrom versions of the same cameras.  Speaking of which... we never got a SL2 monochrom 🤔

SL2 is basically a higher resolution SL2-S with all the fW updates at this point.

Isn't the SL2-S the newer of the two existing models, with  newer and less noisy sensor.  I figure to keep it and consider passing along the SL2 once the 3 emerges.  My experience with M11 shows that sensor to be a big improvement.  But when?  Despite the rumor murmur, the usual suspects, such as Jono Slack, haven't started rearranging their websites yet.
