Only the JPEG will be black and white however, NOT the DNG file. You have to convert it to b&w in PP. That is what most b&w shooters do, because in Photoshop e.g. you can apply not only classical darkroom tricks like burning-in or shading, but also separate the colour channels so that you can emulate the effects of camera filters, such as yellow or orange e.g. by dialing down the blue channel a bit.
