Why does Leica use another 2 months to release a new firmware? Apple publishes new firmware on the day they release a new equipment.

Leica had enough time, and the firmware change is certainly not too extensive.

Because Apple has about 50k employee across the world, Leica 1/100th of that. Their software engineering team is probably very small and can work only on one-two projects at the same time.

The firmware change is indeed extensive. They have to support a brand new piece of hardware with different specifications. The M10 is powered by the crappy Maestro II, which may not be enough to power and drive the Visoflex 2. It was barely enough even for the old 020.

Just from the top of my head, what about lag? Is there any blackout when using it? Battery draining? Is camera responsiveness affected when adding the V2? Are all functions working properly? Does it work ok during long exposures or is there any unexpected issue? These are just a few questions Leica's team has to figure out and time is needed for firmware optimization.

So does Leica.  Firmware is changing right up to the day of announcement.

Yes and no. Usually software goes "golden master" at least a few weeks before announcement. This is because it has to be installed on the cameras, and these cameras have to be shipped to dealers. It can't be done too close to announcement, because if there's any software regression introduced, you may cause shipment delays.

What can be done, is to keep working on firmware changes and publish them as a follow up update.
