Fourier analysis tells you the levels of very narrow bands of frequencies, corresponding to levels of different color hues in this case. Measuring the same areas of the projected image, it’d let you objectively compare color balance and sharpness of different lenses. Related, Fourier transforms are usually used to get from a time-based equation to a frequency-based one, a very useful thing in analog signal processing.
