Hi Michael, I am sure you are thinking of Cassoulet - one La France's many gifts to civilization (don't get me started). SLight variations from Toulouse to Carcassonne. Mmmmm. However. Think a little north of Toulouse, a bit out of classic Cassoulet country. But you are not far off. Think of an area with rich and thick red wines.
