Maybe to show image quality and low light capability?

You could say the same about any photograph because reality is not monochromatic, but some representations of reality look better in black and white.  Just my opinion 🙂

I hear you, but in this particular case, the photograph of a painting, the artist has already decided how he sees the world, namely in color.

That painting is in a relatively dark corner of my home. I often use it to check the quality of high ISO images of various cameras. I like how the monochrome sensors work and I liked the results of the B&W conversion.

My painting is a replica of Rijksmuseum painting, signed 1657, while Rijksmuseum's painting is from 1656.
