I, for one, don't want an EVF on an M. I could be alone, though.

Well, that will save you some money by not buying one, and the cherry on the cake is that you have less risk of losing the ridiculously expensive hot-shoe cover.

I don't recall exactly, but I think it was north of fifty Euro.

$60 in the US for the OEM version.   Less than $10 for a generic replacement.  The OEM has some metal in it, but not sure of the purpose.   The OEM also covers the EVF port and the generic does not.

@ 100fps, I suppose?

120fps (you want a multiple of 30).

Oh, and there is no shutter button, because the camera is always shooting.

If you find a nice subject, then you just take note of the time and pick the frame you like best later, when you download the pictures.

You can't miss the decisive moment, if you capture all moments.

Trying the focus peaking on the Sony A7R ii, which is pretty good when you magnify, the focus on the 75mm APO Summicron is very delicate.   A shade shy of infinity is needed to get perfect focus of far off objects.  It's possible that I could get that with a rangefinder, but with my eyes, I doubt it.
