The M11 does detect the moves of the focus ring. Fortunately for auto image magnification aka auto-zoom. It is a strength of the M11 compared to mirrorless cameras that have no roller cam to communicate between the lens and the rangefinder.

Even with the macro adapter between lens and body?

No but focus peaking is one of the settings that can be stored in user profiles. When mounting the current macro adapter, the camera detects it automatically since it has its own code number (111001) contrary to the previous macro adapter with goggles. Then the camera may cancel the user profile that was in use before mounting the adapter. I don't remember if this cancellation is automatic but i suspect this might explain the OP's problem.

That was it - thank you! Seems like focus peaking wasn't on explicitly in this profile (or the default profile I guess?), even though it would turn on automatically when the macro adapter wasn't attached and I went into Live View.

Depends on the user profile you chose i guess. If you chose the default profile, focus peaking is a part of it and should not be disabled whan mounting the macro adapter normally. I have not the macro adapter on hand though so it is just a guess on my part.
