Mark and his wife operate a small sourdough bakery in Palm Springs, CA. They produce a variety of great breads, all sourdough, and do everything in-house, including milling their own flour. The shop is just a few blocks from our place and is only open Thursdays and Saturdays from 9 AM to 2 PM. The shop is so popular that there are usually about 20 people lined up a few minutes before they open. At 9 AM sharp, Mark unlocks one of the doors, pokes his head out with a big smile and reaches around to unlock the other door. He's a really great guy with a great business. The breads are fantastic!

We got into a habit of getting there around 8:45. Then one day we couldn't get there until noon and they still had lots of different breads available. That made us wonder why people get there so early.
