Taking a number of images at different focus settings and merging them to increase DOF. Very useful in landscape photography and close to mandatory for macro.

To answer the OP: I prefer Photomerge in Photoshop CC.

What you describe is called focus stacking, not photo stacking (I use Helicon Focus for focus stacking).
Photo stacking could also be merging images to reduce noise, blur movement, or eliminate moving objects (I use PS).

On the other hand, it is very probable that OP meant focus stacking. I am unhappy that Leica does not support in-camera focus bracketing in any of its camera, though I understand why it is not supported in M cameras ;-).

Focus stacking is a computational intensive operation. PS, Helicon Focus and Zerene Stacker should all have trial installations so that you can evaluate the software before committing.

I prefer Zerene, because every time I had any questions, issues, problems using the software, the inventor, Rik Littlefield, was always available for consultation and help (on line and telephone).

Which camera will you be using?  I ask, because Leica image shuttle has been invaluable for my orchid photos.
