Just picked up a s1r, used to replace a sigma fp-l, to be more balanced using the leica zooms but have noticed a very fast shutter release. 
 

Is there an adjustment buried in the settings where it can be set so the shutter won’t fire unless in focus is reached?

There is an option Focus/Shutter Priority (Cogwheel menu -> AF). When it's set to "Release" then the camera fires even when Af is still searching....
