i had set my photo file format to shoot DNG and thumbwheel button to perspective contriol but without me changing anything the file format went to dng & jpeg and the thumbwheel button to iso. this has happened before with other FN buttons and settings and is very frustrating. has anyone else experienced this and know what the cause may be ?

The camera keeps returnIng to default settings when you switch off and then switch on. You need to save your preferences by creating a profile. There’s a section in the instruction manual that explains how to do this.

can you delete the default setting?

No.

Just create all the settings you need and then save them to one of the other profiles. (You can rename the profile if you wish: see the downloadable user manual.)

It’s easier to get the favorite settings in order.then go to the menu that says “User Profile”. Then “Manage Profiles then “Save as” and pick the first empty profile. You can “Rename profile” so it’s called something useful/memorable. Then to be sure select “Save as” again and pick the name of the profile you created. It’s a bit fussy, but once you’ve done it, that’s it,

can you make your created profile the default one ?

Yes and no.

Whenever you have choosen a profile that profile will remain active. Even when switching your camera off and on again your previous profile is still active. But note that whenever you change some setting then the choosen profile is not unchanged anymore. You made a change. When switching your camera off and on again you do NOT have the original profile active anymore. In that case go into your overview menu (the one with the icons) and select your profile. This action will reset the profile you originally set.
