At restaurant Kochi, a Michelin starred Korean restaurant on 10th Avenue at 46th Street, and most definitely world class.  If you wish to go, make your reservations well in advance.  We sat at the bar (there are a few small tables) where we could watch the incredibly effective and efficient "choreography of their work.

BTW:  It's a young woman.  Two of the other chefs using a torch were near me.
