In which case you don't need Siri just use the Voice Recorder App. If it's a newish version you can use Control Centre, Shortcuts or the Assertive Access functions to assign a double or treble back tap to open the app or possibly even better get an Apple Watch and use the same app on there and you won't even need to take your phone out of your pocket. Yes I use an iPhone and was looking for a 'hands free' solution. I tried your suggestion of using the voice recorder app via Siri but you still need to press the record button.
