The orchid family counts tens of varieties. At this time of the year, here in South Portugal at least,  many wild varieties are flowering everywhere. I discovered two in our garden this morning, small but nice.

I think you may be right (I had been comparing the image with some online photographs of Orchis anthropophora x militaris). Looking more closely, what I saw in Greece was most likely Orchis italica.
