The Goldfinch lands on a sunflower, hangs upside down while pecking out and devouring the seeds, then sits atop the cleaned out remains. He will spread the sunflowers all around the garden, which is okay with us.

Very nice.  In the last few weeks we've seen a pair gold finches enjoying a large patch of sunflowers, as have squirrels and LBJs (the non-fanatical "Birder" term for largely unidentifiable Little Brown Jobs)
