Latitude  - The degree to which a certain film stock can tolerate under- or overexposure. Reversal film, for all practical purposes, has a very little latitude. Color negative has a higher latitude, and particular of its latitude it is tolerant of much more overexposure than underexposure.

Portra 800 is known for its versatility. you can even go to ISO 100 (overexpose 3 stops) and to 1600 (underexpose 1 stop). Development remains at 800 ISO Box speed.

Even if you want don't want to stop down your lens too much in daylight, you can put a ND filter on it. I sometimes work like that. This way you can work with one film stock from the morning into the night.

it depends on the Lab you work with. I work with "meinfilmlab" and they can scan one stop underexposed still very good.

it also depends on the scene and lightening situation, lens as well. I use Summilux 35 FLE which is a low light monster keeping the contrast and colors quite well.
