On my screens (iPhone and Mac) the whites aren’t even close to being blown out…they’re perfectly fine.

Are you able to see the same image on different screens/devices? If so, compare them and see if the whites are blown out in both. I'm thinking it unlikely. My Mac screen is a bit darker than it should be and I learned that through seeing the same images on other screens and coming to the conclusion that the other screens are closer to correct so I compensate slightly when doing post on the Mac - however, the difference is very slight. If you are finding that your Mac screen is showing whites as blown out in comparison to other screens, you may be able to fix it through fiddling with the settings or using screen calibration software.

We didn't have this problem in the days of showing physical prints to each other...

Sure, I downloaded the photo and looked at the histogram.

There are indeed two small blown out areas in the clouds (left and to the right top of the building).

But for me this doesn't disturb the photo at all, very nice shot.
