Settings such as colour, contrast are for the JPEG, in Raw you can change it all afterwards. Colour balance, either set it according to conditions or leave on auto.

I shoot raw + jpeg. For landscape handheld, generally f/5.6  - f/8, 1/250 or faster and low ISO 100 if possible, and up to 800 maximum as necessary. Also,  single spot SAF or manual focus and I may adjust the white balance if too cool.
