Have an M10-R – which is great, but coming from the M10 is a bit disappointing in terms of the post-processing work required to get images where I like them.
The M10, in my eyes, had it right 95% of the time. So I'm exploring picking up a companion camera to address somewhat my need for better color –
the SL2-S is a "bargain" of sorts right now, and would be great to have video and optional auto-focus too (have a 2 year old).
Had a Leica Q previously that checked some of those boxes but the 28mm factor I found too limiting.

Question is will the SL2-S scratch this itch? I've been going as far to think about an X2D, but that is getting crazy out of budget.

The point is that one should should raw, and there will be no SOOC colour. If you don't like the conversion by your software, shoot a Macbeth colour chart (like the Xrite Passport) and create a specific camera profile for your raw processor, or tweak an existing profile to your taste and save as default.

Then you can just click the auto button and in most cases have a decent result in ten seconds processing.

All this is quite easy to do, a lot of effort less and an enormous saving over going out and buying a new camera which may or may not meet your taste either, and it will minimize your computer time. (And it will be a whole lot better than trying to correct SOOC JPGs which is a dead end.)

As for your original question, it is unanswerable as everybody will have his/her individual colour perception which most likely will not match yours.Β
