If you set the CL to DNG+JPEG and with the picture mode to B&W, your EVF and backscreen will be in B&W. The DNG will have a B&W preview, but will contain all color info. The JPEG will be B&W SOOC.  The DNG allows for the best B&W conversion with virtual filters applied after the shot in PP. And if needed, you can use the DNG for color. I usually shoot in this mode and throw away the JPEG, or sometimes use it to quickly see if the shot works in B&W or not, then convert the DNG to B&W in PP.
