You're right, you didn't mention HDR...but your original post, talking about dynamic range, made me go into the scene menu to realize HDR is one of the selections (which I'm sure I had seen in the past but didn't register in my brain at that time). You're also right, it is amazing to see how much information raw files have in them despite of looking either under or over exposed to balance them well post processing.
