You will always have a "colour" DNG. Basically the DNG is not an image format that contains colour, but it provides the full data that are converted into a colour image file in your postprocessing software (e.g. Lightroom)- or, if that is your choice, a B&W image. The B&W JPG file that you refer to is created in the camera and exported without alteration.
