It depends if you want to go the editing route (especially color grading with great results) or not. You can set your camera to either behave like an iphone or a pro cine-camera.

Personally:

.MOV > C4K > 24fps ALL-i > Video Gamma: L-Log for the utmost quality. I love the 5K mode in 4:3 as well.

Keep in mind minimun ISO becomes 400 when shooting L-Log or HLG (semi-ready HDR gamma) so you need to invest in ND filters when going outside or for bright interiors if you want to avoid weird looking motion caused by closing down your shutter and/or soft images because you will have to shoot at F22.

If it's for ready out of the camera, you may as well set the gamma back to "none" and tweak your look in the "jpeg" option: Natural, Standard, Vivid, B&W and adjust the highlights, shadow, contrast.... to your liking. Keep in mind IDR also works in those modes if activated, it can look great or awful...

You may as well revert back from MOV to MP4 (8bits only, lightweight files with Out of the Box ease of use) but bear in mind the SL2 can do sooo soooo much more than just this. Think of it as just shooting JPEGS.... its a shame to miss on the DNG potential (especially SL2 jpegs are  🐕‍🦺💩)

Jeffry, long story short: the SL2/S (both version, the S a tad more video-optimised) is a very capable film camera. And it doesn't work for you, chances are high that you missed out something.

Slender gave you some advise, I can add to that. But your question is so general that proper answering is impossible. Filmmaking is a vast field, even wider than photography. When you have concrete questions, it will must easier for everyone to respond.
