The camera itselfs is using the JPEG image for displaying on the monitor or the EVF. So you will see the B&W-JPEG image instead of the coloured RAW. Why don't you shoot RAW only? Sometimes the JPEGs are quiet good The JPEG image which is shown on the camera's monitor is at many digital cameras better for judging sharpness then the temporarly generated image from the RAW file.
