Welcome to the forum

Raw (DNG) files will always be saved in colour, but if you set the jpg to black and white, in your camera settings, that will remain in black and white (if you import those too).

This gives you the option of reverting to a colour file in your computer, should you wish.

There have been various M cameras that ONLY record in black and white (monochrom models), but there is not a Q equivalent, as yet.

A raw image is a reading from the camera's sensor.  Your Q2 has a color bayer filter in front of the sensor to separate the reds, greens, and blues.  When you set the camera to B&W the camera processes the R, G, and B raw data seen by the sensor to create a B&W image.  When you upload a captured raw image to a computer the computer gets that R, G, and B data.  It must be processed to show you an image.   Depending upon the software used to process the image in your computer you may see it in B&W or you may see it in color.

Sounds like your you have turned on the in camera B&W mode but have left it on DNG only. You will see the image in B&W in the viewfinder and also when you review the image as it is showing you a jpeg preview file. when you export the file to your computer it will only export the DNG file which will not be effected by any of the in camera jpeg settings hence the colour image
