Following Leica Camera Australia's guidelines on setting up the camera, I find I can change neither ISO Auto Upper Limit (Photo) nor Min. Shtr Speed from AUTO.  (Page 2 of camera icon settings) When I try, I get the message "This menu item cannot be changed".  Any idea why?  Also, fastest way to do a reset to factory default settings?

Some modes will not have these menu options. Read on and it should explain which modes apply. Your manual will also explain how to do a factory reset. It varies with models. I don't have the model 7.

I found similar and had to go into Custom settings and all was then available to set up.
