I want a single durable higher quality multi-purpose compact camera to carry into challenging (wet, cold, dusty, etc.) environments. Can someone please help me understand how the X U is better than the Olympus TG-5? Without optical macro, optical zoom and $3k higher price it's hard for me to see the up side here

I do not have the XU, but after using the X1, X2, and X Vario for extended periods of time along with owning the Olympus TG-3 for a while I can offer a perspective. The Olympus TG cameras are good, but I would rather just have a Lifeproof case on my iPhone and get about the same quality. The XU would be my go to camera when image quality and the desire to print at a larger size is more important that just capturing memories and printing 4" x 6" or 5" x 7". If you have a once-in-a-lifetime trip I would spend the extra for the XU. If you just want to grab pics of the kids at the pool (as I do) go with the Olympus. The other thing to keep in mind is that if you get the XU, use it for the trip and want to sell it, you will get most go your money back as they seem to be in demand on the used market.
