Traditional manual focus workflow for the past umpteen years:

 

1- Focus

2- Set exposure

3- Frame

4- Release shutter

 

If your going to make more than one exposure of the same subject and you want the exposures all to match, switch to manual exposure too. 

 

AE-Lock what? and why?

For all subjects, far as I'm concerned. I've always worked this way ... sports, portraits, racing, landscapes, whatever. Been doing it this way since 1966. 

 

For some things, of course, I pre-focus and set the exposure long before I look at a particular subject to make a photo of. Depends on the environment and consistency of the light, as well as the consistency of my distance to subject.
