Are you using a 'Time Capsule', or is your backup drive connected in some other way via a wireless network? If so, then I believe that that can slow things down quite a bit. (Especially if your network is busy, or you are in an electrically noisy environment.) My primary backup drives are a 3 drive chain of 1 Tb drives attached to my main machine via Firewire 800. I do have an additional 1 Tb drive attached to my Airport extreme router via USB, this is far less rapid, and is mainly used for my laptop. I've done a full restore from my backup drives using time capsule, and that only took a couple of hours for over 300Gb of data. For my Parallels files, I exclude those from Time machine, and use Apple's backup utility to back those up once a day, and late at night when I am not using them. I keep the minimum possible amount of data in the Windows system, using shared folders for all data files, so those are still backed up to Time machine hourly.
