Crawdad Boil

Yesterday some friends and neighbors got together for a New Orleans style crawdad feast at the park across from my house. The crawdads were boiled with corn, potatoes, sausages and lots of rather "warm" spices. The person who organized it drove to Iowa for 20 pounds of live crawdads and it was worth the drive. The flavor is very much like lobster. The one difference between this and a crawdad boil in New Orleans is that with ours there wasn't anyone "sucking the head." It was all tail meat.

That's an allergy problem I'd hate to have. Shellfish are one of my favorite foods. I wonder if it would make a difference whether the shellfish are ocean or freshwater sourced? These are freshwater.
