Gershwin just played off the real-life difference between British (and American upper-class) Tohmahtoh, and American Tohmaytoh, to extend that to potato, for rhyme scheme.

Although the original Spanish-borrowed-from-their-colonies is patata ("pahtahtah"). Patatas fritas being either crisps or chips, depending....

Although poetic licence did not extend to torturing pronunciation the way that Gershwin did, I think we get the joke ...
