Hi, Mike, that's the flower of Agave American whose common name is Century Plant.  It's called Century Plant because it was thought to flower once every hundred years but in fact it flowers every 10, 20, or 30 years depending on habitat and climate etc, although some only flower once.

Thanks, Pete.  I had seen this plant before, but never made the connection to the pointy leaves base, which was always present.  An interesting plant.  Here's a couple of other examples I have seen in Greece.
