Hi Albert, I'm an amateur myself, picking things up as I go along. If you use a B&W present on the camera it will only affect the JPGs. The DNG fils will always capture all the information from the sensor, including colour. I prefer not to use the camera's presets but do the conversion in Lightroom (you should have a free license with your CL purchase). I attache two B&W conversions using Lightroom's profiles. The first one is 'Low Contrast' and the second one is 'Landscape'. Welcome, dear visitor!
