Now,

the subject is turning from front lighting to back lighting

what do you do ?

dig into your menue and piddle with your controls,  ... or reach for the X100

Or - just flip to manual exposure - which is far more accurate than guesstimating the EV compensation anyway.

that brings me back to the question:

Why can't they show the shutter speeds in the viewfinder when shooting in M mode?

There is no good reason. It is a shortsighted shame.
