Paul Paul, Katz is the most famous Jewish Deli in the world. Two other establishments on Houston street complement what was once the heart & soul of the Jewish Lower East Side population. On your next visit (and I hope you'll contact me so we can meet), when you order your pastrami lean, oververtly put a dollor or so in the tip cup in front of the man cutting your pastrami.
