An old traditional Lebanese bread called Markouk. The dough is flattened by a complex yet extravagant hands & arms moves. Few people still make it, they are usually high altitude villagers.

How is thi different from "laffa" bread, or is it the same with just a different name?

Could be the same, what differs is the cooking methods that gives slightly different flavors. The technique is what is getting forgotten since only old generations still practice it. It involves flattening the dough by moving it from arm to arm in a very fast moves. They don't use fingers or any other device to do it.

Thank you Charles. Yes, unfortunately few still do this bakery tradition, you know, new generation is more skillful using pads. :-)
