Did you just desaturate the image, or did you have a filter ?

4 years ago I desaturated only. This was easy, but gave medicore results. Main flaws are noisy blues (sky) and very "digital" (=un-natural) grayscale.

2 years ago I started to convert images to grauscale (Image/Mode/Grayscale in PSE3). This gave very noise-free results, but still un-natural grayscale palette.

Today I use http://www.photo-plugins.com/ b/w filter. I also tone with it. Recommended.
