James, as is often the case, I echo Stu's sentiments. You should try and get the other images to match these superb colors, Try, try, try some more. It will happen & you will enjoy them more.

Lovely tonal gradations on the building.

Suggestion: when you increase the saturation in the lower part of your Portugal images, make a mask so that you don't super-saturate the sky. The skies seem over-saturated, & the way PS works, saturation of deep blues also tends to shift their color.
