I'm open to correction here.... but I believe that the organisers of Le Mans insisted that (for some years at least) the cars mush have a full width windshield (this certainly happened with Lotus, so I guess Jag was the same), so I believe that you are correct.
However the "standard" arrangement was as shown here, although there were variations, some cars had two small windscreens and I believe that at least one car did not have the tail fin!
With Tony's indulgence I'll post a couple of example here- the car with a large passenger is about to be driven by Jaguar's test driver Norman Dewis, aged about 80 when I took this shot at Aintree, I think the other is JHT's car that you refer to..
